Turkey Veggie Goulash -- Recipe

It seems that every other week, at least!, I see "Turkey Veggie Goulash" creep back onto the menu plan. Now, I am the one who makes the menu plan, so why don't I change it up more often. Well, because this Turkey Veggie Goulash is so darn good! It is healthy, and Lil'bug and I love it!

Ingredients:
  • 1 lb Ground Turkey (ground hamburger works, too.)
  • 1 can of green beans
  • 1 can of carrots
  • 1 can of diced tomatoes (I always use the Italian Style for a little extra flavor)
  • 2 cups of pasta (Farfalle today, but we have used all kinds! Penne, macaroni, orecchiette, etc.)
  • Minced onion (to taste -- this is totally optional!)
  • Salt and Pepper (to taste)
Brown the ground turkey, and (in a separate pan) boil the pasta until tender. While that is cooking, open the cans of green beans and carrots and rinse well. (I don't usually like using canned veggies because of all the extra sodium, but they work really well in this dish. When I do use canned veggies, I always rinse them to get the extra sodium and goo off.) Put the clean veggies in a big mixing bowl, and dump in the diced tomatoes (juice and all!) Add the onions now if you want. When the turkey is done, drain and add the meat into the mixing bowl. Same with the noodles! When they are finished, drain, and toss in the mixing bowl. Give it a good mix, and enjoy!

We even love the leftovers cold at my house! If you do any variations to this dish, let me know how they turn out!
